I’ve been really wanting to introduce bitters into my life, but it’s complicated because I have Mast Cell Activation Syndrome and due to some recent flare-ups over the last few years, I am allergic to many many otherwise healthful things (think: GINGER, honey, sugar cane plant which- against all odds – still gets me if I have cane vinegar or alcohol!). I also would like to try an alcohol-free(ish) bitters blend, but don’t know how effectively most of the herbs I’d like to include would extract into glycerin.:/
I’m allergic to apples, so no apple cider vinegar, but I was thinking I might try white wine vinegar, but again, vinegar can be a trigger for MCAS, so I’d rather avoid ingesting it every day like this (sensitization is more likely if I ingest something every day).
My (maybe crazy) idea is to use the alcohol intermediary method (just like with making strongly infused oils!) and then do the “real” extraction into glycerin. There will still be a tiny amount of alcohol in the finished bitters, but that amount would be fairly negligible. Has anyone ever tried this? An alcohol intermediary method glycerite???
