Hi. I’ve just watched the herbal vinegar video and have a couple of questions. I’ve made vinegar infusions with fresh flowers before (dandelion and chive flowers in particular) and I’ve never heated up the vinegar before. I’ve also used a much larger quantity of flowers than the instructor uses in this class. I’m just wondering about her reasoning. Why is heat needed? Do the medicinal constituents need heat to infuse? And if so, why then let it sit for a week to a month? Also, is the ratio of herb to vinegar enough to have a medicinal effect or is the main goal flavour and esthetics? Thanks.
