This is a great question. Technically an oxymel is something acid and honey (sweet), so vinegar and honey is used in most cases, but you have a couple of options here instead of the honey.

1. You can make elderberry vinegar without the honey or sweet component. The medicinal qualities of the elderberry are still fully extracted in just the vinegar.

2. You could trade out the honey for something else sweet, such as food grade vegetable glycerine, agave syrup, etc. You can also play around with the ratio of sweet to sour in this instance depending on your taste.
