Hi Brigette, you can certainly use dried lavender for infusing into honey. The reason to use fresh when it’s available is that it contains much higher amounts of essential oils, which flavour and make the honey medicinal. However, dried is great too if that’s what you’ve got! When using dried, I definitely recommend using a heat method to help extract the flowers into the honey. As the dried flowers are more concentrated in weight, you can use a bit less than when using fresh, just the same as you would when using dried versus fresh herbs for tea.
