This is a good question. Usually, when plant fresh plant material is left in oil for too long, mould will form on the top. However, if your oil is smelling and looking good, then you should be okay to use it! I’m wondering if you used a warm infusion method or just countertop. Regardless, I’d say, just avoid squeezing the petals when you extract them from the oil to avoid releasing any extra water that could still be stored in them. You may further extend the life of your oil by storing it in the fridge once the petals are removed.
