I don’t think there’s anything wrong with your method. It can be helpful to wilt herbs first. I think what’s happened here is that the constituents in dandelion root don’t extract well into oil. Various constituents extract into alcohol, oil, or water best and dandelion root is best as a decoction or alcohol tincture. That is likely the reason the oil colour isn’t changing colour. I think you could re-use this oil with another herb that is better suited to an oil infusion. That’s why I asked what you hoped to do with this, I’d like to help you find an alternative!
