While in the fruit section, i read that blueberries have a low glycemic index and it got me thinking about how i feel eating blueberries at different times. I’ve found that when the blueberries are super sour and maybe not exactly great to eat, i’ll feel extra bloated, my head will get a bit foggy, my eyes will feel dry and sticky, and my body will begin to feel kind of tight and like the fluids in my body aren’t circulating properly or something; kind of like my muscle are drying out or puckering up as well. But when I eat blueberries when they’re perfectly ripe, perfectly sweet, not sour at all, etc, i feel fine! So this leads me to my questions/curiosity of why i might feel that way when they’re super sour, and whether fruits can have different glycemic index’s at different stages of their growth?
